Ginisang Upo at Kabute (Sauteed White Squash with Mushrooms)


INGREDIENTS:

  • 1 pc. small to medium or 1/2 pc. large upo, peeled, washed and sliced
  • 1 pack fresh mushrooms, washed and sliced
  • 1/2 lb. cooked (by boiling) chicken meat, shredded
  • 6-8 cloves garlic, minced
  • 1 pc. medium red onions, sliced
  • 1 pack Ginisa Mix
  • cooking oil for sautéing
  • Salt and Pepper to taste (may use fish sauce in lieu of salt)

INSTRUCTIONS:
  1. Sauté garlic until brown, remove and take aside.
  2. Sauté onions using the remaining oil until clear.
  3. Add cooked chicken and continue o sauté until light brown.
  4. Add contents of ginisa mix. Mix well.
  5. Add sliced upo and continue to cook until little tender. Mix occasionally.
  6. Add sliced mushrooms and simmer for 3-5 minutes or until mushrooms are cooked.
  7. Add salt and pepper to taste.
  8. Garnish with toasted garlic on the top.
  9. Serve hot and enjoy!
