Shredded Carrot And Scallion Flat Bread Recipe


INGREDIENTS

2 cups                                All Purpose Flour
1 teaspoon                       Salt
1 cup                                  Hot Water
Sesame Oil for brushing
¼ cup                                 Chopped Scallion (recommended is 2 cups)
1 cup                                  Shredded Carrot
8 pieces                             Eggs
2 teaspoons                      Sesame Oil
Salt to taste

DIRECTIONS

  1. Combine flour and salt.  Give it a quick whisk to combine everything.
  2. Make a well at the center of the flour mixture.
  3. Pour the hot water into the center of the flour mixture.  Using a fork, mix until everything comes together.
  4. If the dough becomes too sticky, simply use your hands but be sure the dough is at workable temperature. 
  5. Knead the dough until smooth and it does not stick to your hands.  Add some flour if needed.  Knead for about 8 to 10 minutes.  Wrap the dough in a plastic wrap and rest for at least an hour.
  6. Divide the dough into 8 parts.
  7. Roll the dough and flatten it using a rolling pin.  Brush the surface with sesame oil.
  8. Add in shredded carrot and chopped scallions.
  9. Roll and coil the dough.
  10. Flatten this coiled stuffed dough using a rolling pin.  Pan grilled the pancake until cooked.
  11. Beat eggs, salt and sesame oil.  Fry in to thin sheet, about quarter of a centimeter.  Topped this on the grilled pancake and roll.
  12. Served warm.
