Cauliflower Broccoli Cheese Recipe


For the broccoli and cauliflower sauce:
450g (1lb) frozen broccoli florets
450g (1lb) frozen cauliflower florets
6 sun-dried tomato halves cut into strips

For the cheese sauce:
50g (1.8oz) butter
40g (1.4oz) plain flour
650ml (2.7cups) warm milk
150g (5.3oz) grated Cheddar cheese
25g (1oz) chopped frozen basil
Salt to taste


1. Steam the broccoli and cauliflower florets, straight from frozen for about 10-12 mins until al dente.

2. Make the cheese sauce. Melt the butter and add in the flour and cook for a couple of mins. Gradually whisk in the milk and mix until the flour paste is well blended in. Cook until it thickens and then mix in the cheese and frozen basil, season to taste and switch off the heat.

3. Preheat the grill. Put the broccoli and cauliflower into a heatproof dish, and pour over the cheese sauce. Top with the sun-dried tomato strips and grill until the cauliflower broccoli cheese is golden and hot.
